CERES - The planet of fertility in a cocktail

During Barcelona Hotel Bar Week 2025, bartender Valerio from the elegant Azimuth Bar at Hotel Almanac Barcelona presented a celestial cocktail: Ceres, inspired by the dwarf planet that symbolizes fertility, nature, and rebirth.


Azimuth is a space that revolves around astrology: each cocktail is a constellation of flavors, aromas, and concepts. At CERES, we see that philosophy in its purest form: a cocktail that connects earth and sky, the vegetal and the cosmic, the artisanal and the elegant.

The inspiration behind CERES

In the modern mythology of Azimuth's astrological mixology, Ceres represents abundance, connection to the earth, and the blossoming of summer. Just as the planet-body marks a cycle of growth, the cocktail seeks to evoke it: freshness, delicacy, and herbaceousness, but also depth and structure.


100&NOMORE's gin serves as the centerpiece, and Valerio has dressed it with bergamot, elderflower, lime, and a minimalist touch of syrup… crowned by an herbal oil that unfolds in the glass like a hidden garden.


An experience that calls for both contemplation and conversation.


The soul of the cocktail: 100&NOMORE Brighton

Our Brighton edition is the gin with which we built this universe. Hand-distilled in Barcelona, ​​Brighton is based on the London Dry tradition, and its main characteristics include:

  • A dominant juniper, as in any good London Dry, provides structure and character.

  • Coriander seed, angelica root, and green cardamom, which give it aromatic, herbal, and spicy complexity.

  • Orange, bay leaf, and licorice in the mash, which add a bitter-citrus undertone and a slightly sweet background.


Brighton is perfect for drinks where the gin must remain present and defined, but also interact with secondary ingredients that bring light: just as it does in CERES.




Ceres' Recipe

  • 40 ml 100&NOMORE Brighton

  • 10 ml Bergamot Liqueur

  • 15 ml Elderflower Liqueur

  • 15 ml Lime Juice (freshly squeezed)

  • 1 teaspoon (+/- 5 mL) sugar syrup


Shake all ingredients with ice in a cocktail shaker and serve in a pre-chilled martini glass.


Garnish: Finish with a few drops of herbal oil—an infusion of basil, cilantro, celery, and cardamom—which adds an emerging aroma just as you pour.

Tips to make it perfect

  • Chill the martini glass before serving: a chilled glass preserves the flavors better.

  • Use large ice cubes in the shaker to avoid over-dilution.

  • For the herb oil: soak basil, cilantro, celery, and cardamom in oil for an hour, filter, and store in a small bottle for a few drops at the end.

  • Serve immediately after shaking to preserve the aromatic bubbles.

  • Enjoy it calmly, converse, observe the color, smell it before sipping... a cocktail like this calls for a pause.
